Vegetarian Panini with Cheese, Tomato, Red Onion and Arugula
Forgot to take a picture alas, but this is well worth making. I was looking for a quick dinner, something warm, and thought a panini would do. I made this on sliced sourdough, not any special bread.
- Dijon mustard
- Tomato, a few slices
- Fontina cheese, sliced
- Red onion, a few slices
- Pepperoncini, sliced
- Arugula from the farmers’ market
Went perfectly with an artichoke for a nice supper.
